Job Description

The Renaissance Hotel at Patriot Place Foxborough is seeking an engaging, friendly, and  detail oriented Kitchen Supervisor to join the team. This individual is responsible for coordinating, supervising kitchen operations, with a focus on guest satisfaction.

GENERAL RESPONSIBILITIES

·       Prep and prepare food of consistent and high quality

·       Assist in all kitchen functions

·       Assist in planning, organizing, directing and control of the kitchen operation and administration

·       Prepare food following recipe cards and production and portion standards

·       Assist in the recruitment, hiring and training of new line cooks.

·       Adhere to all applicable Colwen/brand standards

·       Prepare, cook, and present food in accordance with productivity standards, cost controls and forecast

·       Ensure proper serving portioning and presentation standards

·       Ensure proper prep portioning to avoid waste

·       Date and rotate stored food items as per hotel and food safety standards

·       Ensure proper time and temperature standards

·       Maintain a clean and sanitary work area

·       Practice “clean as you go” method

·       Assist in dishwashing as needed

·       Check par levels for shift use

·       Note out of stock items and possible shortages

·       Order food based on weekly forecast

·       Assist in creating plans and actions to correct food cost issues, control food waste, and loss and usage as per hotel standard

·       Operate, maintain, and properly clean all kitchen equipment for cooking, prep and storage

·       Assist in prep work for next shift

·       Ensure proper breakdown at end of shift and cleaning of kitchen and other workstations as needed

·       Plan/ prepare food for functions as based on Banquet Event Orders (BEO)

·        Perform other duties as assigned

Qualifications

·       1 year related work experience (hotel experience preferred)

·       T.I.P.S. and ServSafe certification (within 30 days if certification is expired)

·       Strong Leader of people

·       Strong presentation skills

·       Proficient in English language

·       Familiar with common computer software programs

·       Must be willing to work holidays and weekends

·       May require overnight stays

·       Must be willing to work varied hours
