I once heard, “What’s the point of making 36 flavors if you can’t get vanilla right?” That’s a pretty valid point. One, seemingly, that Spring Brook Farm in Reading, VT takes to heart. For the past three years they’ve produced their Tarentaise, a Beaufort style cheese, with a nutty vegetal flavor to it, and nothing else. That is until now.
