Highlights include, house made pancetta and bacon, as well as a new house made vegan Italian sausage as a great meat free alternative. Persimmon has several new menu items such as Slow roasted Berkshire breed pork loin wrapped in apple wood smoked bacon with glazed root vegetables and Brussels sprout leaves; Braised Vermont bob veal with crispy veal sweetbreads, glazed native carrots and onions, blanquette de veau sauce; and Broken Arrow Ranch venison leg filet with house-made venison sausage, glazed fennel, onions and brown beech mushrooms.
